Last minute Thanksgiving apple pie!

If you’re anything like me, around the holidays you have grand plans of making a million and one super creative perfectly decorated pies. Then you blink and it’s Thanksgiving morning and you’re headed to your in-laws with nothing in hand. Oops. Well good news friends. I have a super fast apple pie recipe that is insanely yummy and simple!

Step 1. Preheat oven to 350 degrees.

Step 2. Unroll one of the pie crusts into an un-greased pie tin. Set aside.

Step 3. Peel, core, and slice your apples and place them into a medium mixing bowl. You want your slices to be between 1/8-1/4 inch thick depending how soft or crunchy you like your apple pie.

Step 4. Add sugar, and spices to your apples and mix until the apples are evenly coated.

Step 5. Dump into your pie crust!

Step 6. Cover your pie with the second pie crust. This bit is sort of up to you as to how you’d like to design your pie. My go to is a simple lattice. I slice the second crust into even strips to create the lattice. I take any extra crust, twist it, and use it as a boarder around my lattice. Leave a comment below if you’d like me to post a lattice tutorial! Another quick option would be to simply blanket cover your pie with the second crust and cut small vent holes in the top.

Step 7. Sprinkle a pinch of white sugar and cinnamon over the top of the pie.

Step 8. Bake for 30-40 minutes or until the crust has turned golden brown.

Step 9. Slice and add a scoop of vanilla ice cream! Enjoy!
